Chicken Curry

This is my mom’s recipe but i have perfected it..
Serves 4 people and take 15-20 minutes to cook.

Ingredients

500g of Chicken (with bones or thigh fillets)
Leggos Tomato Paste (1 table spoon)
Crushed tomatoes (150mg)
Curry Powder (1 Teaspoon)
Garam Masala (2 Teaspoon)
Cummin Seeds (1 teaspoon)
Mustard Seeds (1 Teaspoon)
Fenugreek seeds (1Teaspoon)
White Onion (1)
Crushed or chopped Garlic (1 tablespoon)
Crushed or sliced Ginger (1 Tablespoon)
Olive oil (2 table spoon)
Salt (1 teaspoon or to Taste)
1 Cup Hot Water

Utensils

1. 1 bowl and a medium sized cooking pot with Lid (you will need it)
2. Cooking Spoon

Optional Ingredients

Red Chilli
Green Chilli
Paprika (1 teaspoon)
Fresh Curry Leaves

Preparation

Cut up chicken into bite size and wash.
Rinse chicken in Colander
Chop the Onion in half
Finely chop one half of the onion into slices the remainder half into quarters.
If you are going to use Chilli, then slice all the chillis

In a separate bowl, put the seeds in

Cummin Seeds (1 teaspoon)
Mustard Seeds (1 Teaspoon)
Fenugreek seeds (1Teaspoon)
If you have fresh curry leaves, strip the leaves off the stem and place it in the bowl.

Method

Heat the pot with Olive oil (2 table spoon).
Make sure the oil is very hot. (if you see smoke, its hot enough)

Whilst holding the lid of the pot carefully put the bowl of ingredients in and quickly closes the pot.
(This will roast and pop the seeds)… Remove lid and place the finely chopped onions
Reduce heat slightly and stir until onion begins to brown.
When onions are at browning stage, put in the Curry Powder (1 Teaspoon) and Garam Masala (2 Teaspoon).
Stir until all mixed in well.
Put in the Crushed or chopped Garlic (1 tablespoon) and Crushed or sliced Ginger (1 Tablespoon)
(Optional - put in sliced chilli’s)

Mix all,
Now put in the Crushed Tomatoes.
Mix in until sautéed.
Put in Chicken and mix all together until all coated evenly.
Put in salt
Cover the pot with lid heat on high.
Keep watch and stir every 3- 5minutes.
When thickened soup is at boiling point, reduce heat. And simmer.
During the simmer stage, stir every 3- 5minutes.
Place 1 Cup Hot water and continue to simmer, also put in the rest of the quarterly chopped onions
(water will add soup content)

Taste chicken (check if it is cooked)
And taste soup if there is enough salt.

If all ok,
Then put in Leggos Tomato Paste (1/2 table spoon)
(optional if you are going to use Paprika, this would be the time to put that in)
And mix into soup.
Place the remaining half and stir in well.
At this point it will, the color will go from yellow to a slight orange-ish to red tone.

Bring to boil and remove off stove.

Let it cool down for 5-10 minutes, prior to serving.
